*We use blast chilling / freezing / deep freezing techniques not simply for food preservation but as a fundamental aspect of a long journey of research into raw material processing methods. Freezing food, as part of the transformation process, prevents bacterial proliferation while crucially preserving the food’s nutritional value. Furthermore, through the thawing and cooking procedures of the ‘Niko Romito Method’ we achieve a level of quality and flavour that would otherwise be impossible.
